A quick and easy treat for a hot summer day: frozen cherry coconut milk pops made with only 3 ingredients.
They are refreshing and 100% natural.

Kids love them and they can even help making them, it’s very easy and fun!
Since they’re made with fresh fruit and coconut milk they are full with vitamins and healthy fats: a much healthier alternative to most store-bought popsicles.

All you need is coconut milk, cherries and a natural sweetener such as maple syrup or another liquid sweetener.

I used round ice sphere molds which let you easily work in 2 layers. First you pour one layer, let it freeze and then pour the second layer. You can also use another type of mold.

These frozen pops are made with cherries, but you can literally use any kind of fruit you like and go with what’s seasonal.
Here are a few suggestions that I like a lot: mango, peach, blackberry, strawberry, apricot, watermelon, pineapple and lemon.
You can also mix various fruit flavors.

Coconut milk is naturally a bit sweet and makes a great combination with both tangy or sweet fruit, so just experiment with it!

 

 

Frozen cherry coconut milk pops

 

Ingredients:

1 cup / 250 ml coconut milk
1 cup / 225 grams fresh cherries
1 tbsp maple syrup

 

Shake the can of coconut milk well and pour the milk in the mold to make the first layer.

Freeze for 2-3 hours or until hard.

Blend the cherries in the food processor or blender.

Add the maple syrup or other sweetener of choice. Liquid sweeteners work best here.

Use a sieve if you don’t want any fruit pieces in your pops.

Pour the fruit layer on top of the frozen coconut milk layer and freeze again.

Remove the pops once fully frozen and serve immediately.

Store the remaining frozen cherry coconut milk pops in the freezer.
